set up your egg at 350 degrees indirect, with a clean burning fire. .you don't want it smokey as cheese absorbs a lot of smoke and so a clean burning egg will impart more than enough of a 'rustic' flavor

cook one pound of macoroni or other pasta. ...make up a simple roux. . .melt 3 tblspoons butter, add 3 tablspoons flour, stir over high heat till nice and pasty, then add 3 cups of milk. . .keep stirring till bubbling and thick ...now add about 1 1/2 cups of grated cheese (chedder is good - but to kick it up a notch go with something like a good gruyer) ... stir it all in with the macaroni in the casserole dish. ...top with some italian bread crumbs. . .bake in the egg for one hour. .... good stuff!!
