You are already cooking on lump charcoal so you know the difference between cooking on coals as opposed to a gasser. Now it is time to see how long you can cook on a set of coals. I personally cook on a Komodo Kamado. The KK does it all. Bake, Sear, Rotis, Grill, Low 'n Slow, Smoke, Make Jerkey (even roast coffee?!?!) - everything! And it is insulated so you can cook during the Northeastern winters. Also because it is insulated and seals so well, you will use less coals and cook much more food! Once you try a chicken, duck, prime rib, etc. on the rotis, you will never look back! ;-)
