Wow I wasn't expecting a response from the big dog! Thanks Ray. I am a ceramic newbie and hope this forum starts to take off. I know there are a lot of guys out there with ceramics that know what they're doing and aren't afraid to kick a tip to a rook like me! Quick question on your recipe: I can only fit a medium flat on my egg. It has been my experience that you pretty much can't "over-rub" a pork butt. Is it the same with a flat? I see that you use several layers of rub.
