Accessorie info needed for xlarge bge

Greetings; Today I purchased an xl and l bge for light competition butts and ribs. I called Tom at the ceramic grill store for suggestions. He recommended I first get some mentoring on what meat should go on which size egg. What i was considering is a using Tom's flip 3 combo, 16" stone and 18" drip pam for indirect on the extra large and then the adjustable rig combo with a 13" stone and drip pan for the large egg. Would appreciate any feed back. Flintville, TN
