You will find most very passionate about the ceramic that they chose. Best advice would be to find a knowledgeable dealer. Not one just interested in a sale or a user of a the ones you are considering where you could go see it in use. In practical application, the cream usually comes to the top.
If there is a competition near you, go to it. You can usually find ceramics in use at them.
