If you put your meat on as soon as the temp reaches its peak of 650 in order to sear the steaks, it should rapidly drop to 400 degrees when you close the vents. If you leave it at hot temps for very long, though the ceramic heats up and then you WILL have to wait for things to cool down. But regardless of how your cooker reacts, you can always use the Trex method for doing steaks. Get the cooker hot and sear your steaks. Take the meat off the grill and tent with foil. Wait 20 minutes to allow the meat to "rest" and the cooker to cool down. Then return the meat to the cooker for the final roasting. Good luck! Doug
