Hi I have just started to smoke chicken livers. bullet smoker, top level in a foil tray with a few good glugs of Marsala over the livers cherry wood chips and standard 250 fahrenheit 120 Celsius for about 20 minutes tops. Take out and wrap in foil for 10-15 min to let them rest.
